The average age of the vines is 30 years old. The grapes are carefully harvested by hand and placed in small boxes. Fermentation takes place in temperature-controlled, cone-shaped stainless steel tanks that are open on top. The wine is then aged exclusively in new and used French barrels for 12 months.
