This is our first single barrel rum, and the process for this barrel is slightly different from a bourbon single barrel. They start by blending a variety of rums aged 5 to 12 years, and then re-barrel the blend into a new oak barrel for additional aging. Since this out of the U.S. Virgin Islands, the price is noticeably within reason having missed high import taxes. The nose has notes of vanilla bean, light oak, and a melody of cooking spices. The first sip is very approachable. Cocoa-powder, butterscotch, and more grassy notes, are all very forward, but refined and diluted. The finish is all vanilla bean and cream. A fantastic segue into a category of spirits often overlooked.
